My Vegan Veggie Wrap Creation

I just made the most amazing veggie wrap ever!

So good I had to blog about it!

What’s in it:

Hummus, shredded carrots, red bell peppers, sprouts, cucumbers, red onion, and avocado, with a lime dressing wrapped in a collard green.

All organic of course. And everything is raw- except for the hummus.

This wrap is so delicious and fresh and it’s a GREAT way to get those veggies in! Veggies are the best food for your body! One of the best ways to improve your health is to eat plenty of vegetables (even better if they are raw, locally grown and organic). So yeah… mom was right to make you eat your vegetables!

To enhance the flavors of these fresh veggies, I added a little lime (you can also use lemon or red wine vinegar), and sprinkled some salt, pepper, and cumin. Do this and prepare for an explosion of flavor!

A Little More Personal

It’s been a little while…

About 2 months to be exact! And although life went on for the 20 people who actually read this blog (haha!) it felt like an eternity for me!

I had to fight the temptation to just write… about… anything… due to some sort of perceived pressure to keep you guys happy I guess. I even ran into a few of my subscribers during this hiatus. When they inquired about my lack of posting my excuse was that I have not been inspired to write lately.

That’s part of it…

It is very true that I want to write about things that I think will actually be of value to you. This is a blog dedicated to health freedom, awareness of the pitfalls of modern medicine, organic food and natural living. I didn’t want to start a habit of writing about random stuff just to fill the space. I don’t ever want this blog to become a chore. I don’t ever want to feel like I am desperately clamoring for attention. So, I will write when I am inspired.

Sometimes I’m asked the same health question repeatedly by different people. I usually take that as a sign that I should write about it :)

Sometimes I wake up in the middle of the night, heart racing, and I say to myself, “I must write about the toxicity of sugar!”

Sometimes I will read/hear something interesting from other sources and will want to share.

And sometimes I’ll just have a recurring thought over and over and over until finally I succumb and I write about it.

But aside from lack of inspiration, there’s another reason I haven’t been writing. (And I’m sure it’s related.) I’ve been… uh…. down.

I wrote in my story about some of the health challenges I have had over the years. I must have just been born with a compromised immune system, or maybe I caught some kind of bug when I was really young that screwed me up for life. Seriously, ever since I can remember I’ve been prone to illness. Not fun.

About 4.5 years ago, I decided to overhaul the way I was eating, to the point where I was eating 90% organic! I even got into supplements and juicing and all that jazz.

And for a couple years I felt great!

But ever since I got pregnant with my beautiful baby girl, I haven’t been the same. They say that pregnancy screws with your body. It’s true! For example, if you have a borderline thyroid condition prior to getting pregnant, the pregnancy can actually bring it out full blown!

So I feel like, all of those issues I worked so hard to get under control with nutrition have been slowly creeping back up on me, namely, the chronic fatigue.

Now, don’t get me wrong. I do have an arsenal of tricks to boost my immune system, so I rarely get sick, but it’s a constant fight. For instance, if I’m eating very healthy, getting my 8 hours of sleep, taking my vitamins, doing my relaxation techniques, I feel pretty good. But if I get off track just a little bit, I start to get sick! Whether it be a cold, or more headaches, or just feeling super tired. So obviously I have not gotten to the root of why my body is always on the verge of a breakdown.

It has gotten to the point where I am seeking professional help.

With the exception of emergencies, I try to stay away from regular MDs. Pills and surgery as my only options? No thanks. Being told “Your labs are fine so it’s all in your head,” is not what I’m after either. So if I go to the doctor for non-emergency health issues, it’s gotta be a holistic practitioner.

So anyway, my holistic doctor is helping me get back on track! I’m paying an arm and a leg for his protocol, so let’s just say I am very motivated to do what I need to do! LOL. Exercise, avoiding a long list of foods that my body is intolerant too, taking certain supplements, and dealing with some unresolved emotional issues. (Don’t ever discount the effect that stress, anxiety, and depression have on your body!!)

On top of doing the things I know I should be doing, we are also looking into treating a stealth infection that a detailed blood analysis is showing I have.

So there’s that.

Anyway, I’ve been researching and reading up on all kinds of things! The human body is amazing, but what we are up against in this modern toxic world is unbelievable.

Did you know that chronic fatigue is on the rise? Related mystery disorders such as fibromyalgia are also increasing. What the heck is going on? It seems like people, in general, just keep getting sicker and sicker.

Based on my own research and talking to my doctor it seems that certain bacterial and viral infections have been linked to chronic fatigue: H. pylori, candida, parasites, mycoplasma, just to name a few.

Also, many people who suffer from chronic fatigue can pinpoint a trigger, or a time in their lives when everything started going downhill. There is a theory that a person can be exposed to a bacteria, virus, or parasite, which the body never get’s rid of. It can stay in the body and create all kinds of symptoms which progressively get worse. These infections have even been linked to cancer!

Apparently, since World War II, there has been a huge increase in neuro-systemic degenerative diseases (i.e. chronic fatigue, alzheimer’s, multiple sclerosis, fibromyalgia, etc.). This increase is related to the use of microorganisms as biological weapons. For example, mycoplasma used to be innocuous, but biological weapons research has resulted in the creation of deadly, and easily acquired strains of mycoplasma.

It’s true. Some of what we are dealing with in today’s modern age has been created in a lab. And who knows what the cumulative effect of all these new strains of bacteria and viruses will be…

Yes. These are things that I sit around thinking about. Perhaps I’ll write more on this topic later. This was supposed to be a quick update.

So anyway, I’ve been pretty drained lately. And I have been trying to remove as much stress from my life as I can. I’ve been laying low, but I am slowly resurfacing.

Like I have said before, this is a journey. So I am not ashamed to say that there are still some things I am working on.

I’ve been on a protocol suggested to me by my holistic MD, so if we figure out how to cure this chronic fatigue thing once and for all, I’ll let ya know.

The Pizza Slice That Almost Killed Me

A few days ago I ate a slice of pizza in secret. Yes, I was totally parked on a dark street corner rubbing my hands together, relishing in what I was about to carry out.

And it was a real slice of pizza. Cheesy, gluten-y… you know, the kind with a little pool of grease sitting atop each pepperoni.

I’m not sure what made me do it. I haven’t had pizza in so long. I won’t say where I ate this, but I’ll say that I pass this place all the time and that night, I felt powerfully drawn to it. What the hey? I thought. You only live once!

So the first bite was… heavenly. It was soooo good! But half way through I started to feel a little sick. Still, I forced myself to carry on because it tasted so good… and I deserve to enjoy myself every once in a while darn it!

When I swallowed the last bite, I thought to myself, “Mmmm. That was totally worth it. I can do this from time to time.”

Just as soon as I was feeling OK with the thought of eating one of the unhealthiest foods on the planet a couple times a year, it hit me.

A wave of nausea followed by some bloating. And, about 45 minutes later…dare I say this…. rancid gas. Ok there I said it. Totally embarrassed but moving on.

For a moment, I thought I was going to throw up.

But it was awesome!!

It was awesome because this experience will most likely deter me from pizza for at least another year!

I am not going to lie. I don’t have a ton of intrinsic motivation. I’m not very self-disciplined. My journey to health began because I was sick of feeling sick all the time. (I had stomach problems, headaches, skin problems, etc. etc.)

For the most part, I am very happy with my decision to eat clean, healthy food. But sometimes I wonder if my little health crusade is worth it. It’s no fun to be a social outcast (seriously, all my friends want to do is go out and eat! And I only have like 3 restaurants I am comfortable eating at! :) ). I have also had a few people say to me that they don’t want to eat healthy because they would rather eat whatever they want and enjoy it. They don’t want to give up their fries, and if they do they would like to enjoy them from time to time without it making them feel sick.

And I get that.

The problem is, it seems like everyone is sick these days. And diet has a lot to do with it. I know people easily associate being overweight with unhealthy eating, but being overweight is only one potential symptom of an unhealthy diet. IBS, migraines, acne, chronic fatigue, diabetes, depression, and infertility to name a few are all associated with unhealthy eating!

Many people are sick due to lack of nutrition and don’t even know it!

Just because something is common, does not mean it is normal. Let me repeat: just because you have had bad skin, or horrible PMS, or headaches for years and years does mean that that is how it’s supposed to be!

Some of us have been sick for so long that we think the way we feel on a daily basis is normal. For example, many people have come to accept that feeling drained all the time is normal. Yes I’m talking to you, you coffee addicts ;)

However, one of the first things I noticed when I started receiving proper nutrition was that my energy levels went up. I’m telling you. After you eat healthy for a month or two you will start to feel really good. And it’s weird, because common ailments you use to just live with will start to disappear.

Like I’ve mentioned before, it took a couple years for me to finally throw in the towel and truly embrace a healthy lifestyle. I still slip up. I’m not perfect, especially when certain foods are put right in front of me at social gatherings. But I am noticing that, the healthier I eat, the more.. uh…. forcefully my body rejects unhealthy food.

In a way it sucks. But in a way it gives me the motivation I need to continue on this journey.

Also, since it used to be a huge struggle for me to stick to my convictions, it gives me motivation to start my daughter off right. I don’t want her to struggle with emotional eating, weight problems, or to be sick all the time. I don’t want her to have to suffer with health problems preventable by healthy eating. I want her to be predisposed to prefer healthy foods.

It’s hard to see it, because humans are marvelous creatures and our bodies can take a lot of crap before they start to break down, but what you eat when you are young will start affecting you in obvious ways as you get older. Actually, unhealthy food is already affecting you, but many people do not realize it until it’s too late.

Just because you do not feel sick as soon as you eat something does not mean that what you are eating is not compromising your health. It is, you just don’t notice it because your body is used to toxins.

30 Day Sugar Fast: UPDATE

Well… I am ecstatic to say that yesterday was the last day of my sugar fast!

Yup. It ended on Thanksgiving. And yes, that means that I did not partake in any dessert. But, amazingly, I did not feel like I was missing out on anything! And really, this is what this whole fast thing was about. I wanted to have more self control; I wanted to be in charge, not my cravings. And it feels great to know that I have mastered that!

However, I wasn’t perfect. So here’s how it all went down:

The first week, I did great. It wasn’t hard to not eat sugar. (Remember, before my fast I was binging on organic sweets approximately 3 times a month, so I was accustomed to going a week or two without eating refined sugar.)

But… there were a few times during the first week, where, out of habit, I ate some sugar and did not realize it until after. For example, sometimes I give my daughter these organic cheerio knockoffs when we are out and about to keep her quiet. But I have a “one for you, one for me” habit as I eat them too just because they are there. So a few times after I popped one or two into my mouth I was like, “Whoops! I’m not supposed to eat any sugar!” This happened a few times when I was on my fast. Also, at Thanksgiving dinner, I stuck my finger in the sweet potato pie and gave my daughter a lick and then out of habit I licked my finger to get the rest off! Whoops!

So aside from moments like these- where I accidentally ingested minuscule amounts of white sugar- I did not eat any white sugar. But the second week was when it got hard. I wanted cookies! I would be eating out and would see someone mouwing down on a piece of cake or something, and I would fantasize about chewing on its sweet, fluffy goodness. Nevertheless, I stayed strong! Even though I really really wanted (just a bite) of cake, I was determined to get through this.

By the third week, I was planning all the treats I would eat on the day right after my fast ended. I would walk by the gluten free dessert isle and longingly stare at Pamela’s Gluten Free Cookies and resolve to eat them as soon as I was “allowed” to.

By the fourth week I was over it. I didn’t want sweets. My husband and friends even ate my favorite organic vanilla ice cream right in front of me (Alden’s. You MUST try it!) and I was like, “Meh.” It just didn’t appeal.

You guys… this is HUGE! For me anyway.

Ok. So here are some interesting observations I made note of during my 30 day sugar fast:

1. Real food started tasting better and better! I felt like the natural flavors inherent in a slice of raw organic cheese, for example, really started to explode onto my tastebuds. I liked cheese before, but man oh man! Also, fruit started to taste really sweet. I remember thinking, “Geeez, this apple tastes like candy!”

2. I started eating more fruit.

3. I started eating more healthy food in general. There were a few days where I overindulged in potato chips. I’m not fasting from these! I thought. But I felt a little sick to my stomach if I had more than a handful. So I actually started consciously avoiding chips and other unhealthy items as well. After awhile, they too just did not appeal to me. So I guess what happened is my decision to avoid one particular unhealthy substance bled over into other food choices. It makes sense, given that cravings are usually signs of nutrient deficiency. When I no longer allowed myself to eat junk food, I looked forward to, and even craved healthy foods. I totally wanted to eat salad!

4. My concentration improved. I was super productive these past few weeks! I’m not making this stuff up. It is true that sugar consumption has been associated with depression, brain fog, and chronic fatigue. All of which, contribute to lack of productivity. I also noticed that I did not think about eating as often as I normally do. Time not spent eating, or planning to eat, opens up my schedule for other stuff I guess!

5. For the first time, because it was off limits, I was able to truly understand the connection between stress and eating. During this fast, I noticed that when I felt stressed, almost every single time, I would want to eat something sugary. It was weird- sometimes I would get a craving all of a sudden, and only after the craving, I would realize that I was stressed about something. I also noticed how often I would want to eat out of boredom.

6. Even though, technically, I was allowed to have natural sweeteners such honey and maple syrup in moderation, I found myself avoiding those too. Especially fruit juice. I guess I felt like it was cheating.

7. I cheated and ate gluten a couple times. Normally, I do cheat on my GF diet since I do not have celiac disease. But this is usually at the most, once a month. I ate gluten about 5 or 6 times during my 30 day sugar fast! So next time, that’s something to look out for- the last thing I want to do it replace once addiction with another!

Something else that’s worth considering is that “sugar” isn’t the only sugar. Lots of foods we eat turn into sugar quickly once consumed, such as white bread, white pasta, white rice, and white flours. I rarely eat bread due to my gluten sensitivity, but I do eat a lot of rice, and rice pasta. There has also been an extraordinary rise in digestive problems, such as gluten intolerance, celiac disease, and IBS, and modern industrial baking methods seem to have a lot to do with this. So it’s good, in general, to avoid bread and white rice and white flour. As I’ve said before, the focus of our diet should be vegetables, fruit, organic meat and dairy, wild fish, nuts, and healthy oils such as coconut oil and olive oil.

Overall, I am happy with the results of my sugar fast. Yes, I made some mistakes, but I do feel as if I mastered my cravings for sugar. I like being in control and not feeling like I am missing out on something. The way I see food- as a source of fuel, designed to strengthen and nourish us and fill us with energy- has been reinforced.

It’s a good idea to fast from anything that you think might be starting to control you. It’s a way of hitting “reset” and getting our priorities straight again.

Going forward, I think I am going to minimize my sugar intake- as a lifestyle. Also, I am going to recommit to not buying junk food at the store, so that I do not have access to it at home. However, I will not beat myself up if I have some cookies from time to time, but it will be a rare occasion. Also, I plan on baking more. This way I will have control over the ingredients, especially the amount of sugar I use. I also think at some point I will need to avoid sugar and grains for a time or do some sort of cleanse.

I’ll keep ya updated.

Prop 37 Failed. Now What?

Let me first start by saying that the results of prop 37 have not changed a single thing about how I deal with GMOs. I have been avoiding them for the last 4 years- ever since I found out what they were. A lot of you are disappointed, but do not let what happened stop you from doing what you can.

But I am curious- who the hell voted no on 37? Really. I am curious to know why someone would vote no. Everyone that I talked to thought it was a no brainer- it is our right to know what we are eating. Just like there is an ingredient list telling us how much sugar, salt, or vitamins there are in something, we ought to know if the food itself is REAL food, or the product of genetic engineering.

Anyway, thanks to everyone who voted yes on 37!! Even though it did not pass, we have created a new level of awareness! Just within this last month, I have had so many people ask me about organic food. I am honestly thrilled whenever a friend asks me, “So which items should I buy organic again?” or “I just watched Food Inc. What do you think about it?” You guys- this is how it all starts!

People are starting to question where our food comes from and how it was treated!

And you know what? I don’t need the government’s labels. I know what to look for when buying my food. You too have the power to make healthy decisions for you and your family:

Eat real food. Avoid processed foods and packaged foods. Eat more vegetables.

Buy organic if you can.

Boycott GMOs! If you are buying organic, you don’t really have to worry about this, but if you cannot buy organic, then you need to at least avoid all non-organic corn, soy, and canola. Which, sadly, are in about 90% of processed foods. Read labels, and put the item back on the shelf if you see any of these ingredients. Avoid whole corn too. Don’t worry, it’s actually not very nutritious anyway.

Educate your friends and family about GMOs and the evil company known as Monsanto.

Boycott GMOs! Don’t let your child, your pet, or yourself eat something that has not been studied for long term effects in humans and gives rats tumors.

The people shall fight back by taking their money elsewhere!

30 Day Sugar Fast

Each meal is an opportunity.

An opportunity to fuel your body.

Healthy food keeps us strong, energized and looking our best. Some of the best foods we can eat are known as superfoods. These include vegetables such as kale and broccoli. Nuts such as almonds and walnuts, fruits like strawberries and blueberries, and omega 3′s like salmon and flaxseeds.

Do you know the worst thing you can eat? Sugar!

Particularly white, refined, sugar.

Sugar is my new worst enemy. I say “new” because it is the most recent thing I have had to tackle. I thought I could get away with eating my organic sugary snacks a couple times a week. But after doing a quick sugar fast about a couple months ago (I was inspired by this blog) I realized that I feel way, way, way, better when I avoid sugar.

I wish I was one of those people who could eat a cookie a two once a week. And be cool with that. But my problem is…. if I have one, then I NEED to eat the whole bag! So what’s been happening lately is, I can go about 2 weeks without eating sugar, and then I’ll reward myself. The reward ignites a monstrous craving and next thing I know I am hiding out in the garage stuffing my face with cheesecake.

Mmmm.

Sometimes people say to me: Oh come on! Is it really that bad? You’re too hard on yourself. Must you deprive yourself of everything that’s good? Why not just have balance?

Well, after a couple years of eating mostly organic, healthy food, it has gotten to the point where my body recognizes when I eat something that’s “bad” for me. Almost every time I eat processed sugar, I feel gross. So… if I continue to eat something that makes me feel gross, then I’d say, yes. I have a problem!

As much as I do not want to believe it, sugar is absolutely horrible for- and dare I say, toxic to- the human body.

Why?

Most people know that sugary foods are essentially empty calories. Meaning they have a lot of calories but no nutritional value, and as a result, they are easy to overeat because they are not filling due to lack of nutrition. This is one of the reasons why people who eat a lot of sugar tend to always be hungry. But there’s more:

-Sugar suppresses the immune system. You are more likely to get sick when you have a diet high in sugar.

-Sugar feeds cancer cells. You increase your chances of getting cancer when you eat a lot of sugar.

-Sugar raises insulin levels. Basically, the body functions optimally on a specific level of insulin. When that insulin level rises, health problems ensue such as high blood sugar, which can lead to type II diabetes.

-Sugar causes inflammation. This is the root of many diseases. Think joint pain, atherosclerosis, cancer, obesity, and diabetes.

-Sugar speeds up the aging process.

-Sugar turns into fat.

For too long sugar has been lurking in the shadow of cholesterol and saturated fat. But I am convinced that sugar is worse. Sugar! It’s in a lot of foods and drinks, and chances are you are consuming a lot more of it than you think! (Beware of foods that say, “Fat Free” because usually the fat is replaced with sugar.)

Fatigue, stress, irritability, mood swings, depression, difficulty sleeping and joint pain have all been attributed to sugar consumption.

It’s just not good for us. One of the intuitive ways to know that sugar is not healthy, it that it is rarely found in nature. Even the fruits that we eat have more sugar in them today than they did 50 years ago due to cross breeding techniques. When sugar is found in nature, it’s not the white sugar we are used to eating. It’s a complex sugar that the body needs to break down to a form that the body can use. Also, if a food has sugar, there is usually some fiber in it as well which causes the sugar to be released more slowly into the bloodstream. To make matters worse, we know sugar is addictive because when you don’t eat it, you start having withdrawal symptoms!

Anyway, I’m just stopping by to say: I will be going on a sugar fast! My plan was to do it in October…. but I had vacation plans and knew I would be eating some sugar :) Hey- I was on vacation!

So I guess November will have to do. I really want to do a month. A MONTH of ZERO refined sugars. Fruit and honey in moderation is ok. Not sure what I will do about Thanksgiving… but that’s just one day and luckily it’s towards the end of the month.

I’ll let you know how it goes! I’m looking forward to having more energy, and kicking these sugar cravings to the curb for good!

Maybe you can try a sugar fast too! You know, just by avoiding fancy coffee, soda, fruit juices, and sports drinks, you are half way there!

Organic Reduced Sugar Spelt Chocolate Chip Cookies!

I recently wrote a post about why modern wheat is so bad for us.

So in case you are looking for alternatives to wheat, let me introduce you to spelt. Ok…yes. Technically, spelt is wheat. But it is a more nutritious, more easily digested form of wheat! Did you know that until about 1920, most of the grain used to produce flour and bread was spelt? Spelt is an exotic, older, hardier species of wheat and contains much more protein and fiber. And apparently the protein found in spelt contains all 8 essential amino acids needed by the human body! Spelt also contains more minerals and vitamins than “regular” wheat. Flavor and texture wise, it is also more superior to wheat (in my opinion!).

You have to try spelt- it’s delicious!

Being gluten intolerant myself, I can also tell you that spelt is much, much easier to digest than the wheat you will find at the regular super market. Something about the gluten in spelt being water soluble and more easily broken down by the digestive system…

So yes, I do cheat from time to time on my GF diet. Once in a while I get these scrumptious spelt chocolate chip cookies that I get from my local organic market. YUM! Every time I eat them I vow that I am going to bake my very own batch at home (and save a few bucks while at it!).

I finally got the recipe, but adapted it to the ingredients I had at home, making it a little more nutritious.

All of the ingredients are organic and high quality. I even bought an organic fair trade dark chocolate bar and chopped it up myself! Also, I used coconut oil in place of safflower oil. Coconut oil is the best and most nutritious oil to cook with.

I also like that these cookies are not super sweet. Refined sugar is horrible for the body- which is why I used local raw honey- a powerful antioxidant loaded with nutrients and beneficial bacteria! But if you are used to eating a lot of sugar, you may want to start with 3/4 cup of honey and work your way down :)

The sugar content was perfect for me though.

Here is my recipe:

3 cups spelt flour

1 ts baking soda

1 ts sea salt

1/2 cup honey

1/2 cup coconut oil

1 ts vanilla extract

1 cup chocolate chips

1 cup chopped walnuts

Preheat oven to 350. In a medium bowl, mix all the dry ingredients together. In another bowl, mix all of the wet ingredients. Add the dry ingredients to the wet ingredients and mix again. Fold in the chocolate chips and nuts. Spoon a scoop of cookie dough into a lightly oiled cookie sheet and press down slightly to even it out. Bake for 12-14 minutes.

Makes about 20 cookies.

I’m actually eating one of these as I type! I definitely won’t be eating these all the time due to the gluten content, but I am thrilled to know I can eat a few here and there with absolutely no symptoms!

How To Avoid GMOs

GMOs are killing us. Do you care?

GMO stands for genetically modified organism. Another name for GMO is GEO (genetically engineered organism). GM (genetically modified) food is also a common term.

According to Wikipedia, a GMO “is an organism whose genetic material has been altered using genetic engineering techniques. These techniques, generally known as recombinant DNA technology, use DNA molecules from different sources, which are combined into one molecule to create a new set of genes. This DNA is then transferred into an organism, giving it modified or novel genes. Transgenic organisms, a subset of GMOs, are organisms that have inserted DNA from a different species. GMOs are the constituents of genetically modified foods.”

Basically, a GMO is an organism whose genetic material has been altered by the insertion of another organism’s genes. This is dangerous because genes do not work in isolation. You can just switch ‘em out. Interaction among genes is highly complex, and modifying an organism on a genetic level causes unpredictable results.

Although the technology was discovered in 1972, GM crops were not released for public consumption until about 1994. Tomato was the first GM crop. This tomato had a certain gene deactivated so that the tomato would not produce polygalacturonase, an enzyme involved in fruit softening. Scientists hoped that the resulting GM tomato would have a longer shelf life, but it actually didn’t do so well.

The promise behind GMO technology was that it would increase food yields and create super foods that grow larger and are more resilient to pests. Not only are GMOs not doing these things, but they have also been linked to various health and environmental problems.

So what’s the deal with GMOs? What’s all the fuss about labeling GMOs? Are they really as dangerous as you might have heard?

Well, here’s what we know to be true about GMOs:

1. The American Academy of Environmental Medicine reported that a bunch of animal studies indicate serious health risks associated with GM food, including infertility, immune problems, accelerated aging, faulty insulin regulation, and problems with major organs and the gastrointestinal system.

2. Before the FDA decided to allow genetically engineered food, FDA scientists warned that GMOs can create unpredictable side effects, including allergies, toxins, new diseases, and nutritional problems. Scientists called for long-term safety studies. They were ignored.

3. Mice eating GM corn had fewer, smaller babies. And more than half the babies of mother rats fed GM soy died within three weeks.

4. Farm workers complain of allergic reactions when touching GM cotton. And when sheep grazed on GM cotton plants, about one in four died.

5. GM crops are loaded with pesticides. The majority of GM crops grown are genetically engineered to be herbicide resistant. That means that a field can be sprayed with so many toxic chemicals that everything will die except for the GM crop. This is devastating for wildlife, insects, birds and plants.

6. GMOs are not doing anything for world hunger like biotech companies would like you to believe. In fact, world hunger has reached epic proportions since the technology was developed.

7. There is no long-term research on GMOs. It is a relatively new technology. But negative links are popping up all over the place, and I personally do not want to wait and see what happens to us in the long run.

I encourage you to go to the website for the Institute of Responsible Technology to learn more about the dangers associated with GMOs.

But basically, GMOs are linked to infertility, cancer, allergies, and an increase of certain bacteria and pests (check out some of the links at the bottom of this post). Furthermore, since food and plants have been modified on a genetic level, it is very likely that when you consume them, it can change your DNA. For example, certain foods have been engineered to create their own pesticides. So when you eat them, you might be turning your stomach into a pesticide factory!

found traces of toxic pesticides in 93% of pregnant women and 80% of the umbilical cords! It’s not like scientists never thought that this could happen. They did, and they worried about it. But Monsanto claimed that these toxins would simply pass through the body without harm. Of course. But we have found that this is not the case. These pesticides are now known to lurk in the bloodstream and affect unborn babies. And these toxins have been linked  to allergies, miscarriages, birth abnormalities and cancer.

My heart hurts for our future generations. Just like what happened to the lab rats, we are starting to see more and more infertility problems within the general population. Could it be linked to GMOs?

How many more lies, destruction and death from companies like Monsanto are you willing to take? How much more proof do you need?

Did you know that certain companies (even ones that offer ORGANIC products!) are donating a bunch of money to stop prop 37? Prop 37 requires that if a product contains GMOs it be labeled.

Pretty simple, right? I mean, how hard can it be to write: Contains Genetically Modified Organisms.

Why would they not want people to know which products contain GMOs? hmmm…

Is honesty too much to ask for? I think this is what the Bible means when it says that the love of money is the root of all evil. When you have an insatiable greed for money, it will cause you to do all kinds of evil things, without regard as to who you are hurting. And this is what we are seeing with many companies.

Many companies are into dishonesty. They are paying big bucks in hopes that they will not have to tell you what’s in their “food.” Monsanto, Pepsi Co., Coca Cola, Congagra, Dean Foods (Silk Soymilk), General Mills, Smucker…

They are ALL donating money to keep you in the dark about GMOs.

There is a strong chance that if Prop 37 passes, companies would rather remove genetically engineered ingredients than admit they use them.

So support 37!!

However, we all know that the political process can be slow… and corrupt. Most of the politicians working for so-called ”independent” government agencies have direct links to biotech companies. Our government is simply ignoring the desire of the people to label GMOs in order to support the financial interests of biotech seed companies.

I think it’s safe to say that the government is not looking out for us. So that means you have to take action. And the best way to fight back is to vote with your dollars.

These corporations are trying to keep GMOs hidden from the public eye, so while we’re waiting on the laws to change, it is time we stop supporting these companies, and spend our dollars with trusted companies. We can choose to do this right now.

What can you do to avoid GMOs?

1. First, recognize that the main GM crops are: SOY, CORN, CANOLA and SUGAR BEETS. If these are not organic, then most likely they are GMOs. These are in pretty much all processed food so in order to avoid GMOs, you really have to stop eating processed food (which you should be doing anyway). Other popular GMOs are HAWAIIAN PAPAYA and farm raised SALMON. Non-organic DAIRY and MEAT are also contaminated because most cows and chickens are fed corn and soy. Watch out for ASPARTAME too - (artificial sweetener found in gum and diet beverages) it is usually manufactured with the aid of genetically modified E. coli bacteria.

2. Buy food labeled 100% organic. By law, organic food cannot incorporate the use of GMOs. But as I will discuss below, it’s getting to the point where organic crops are becoming contaminated with GMOs.

3. Look for “Non-GMO” Labels. (Also, download the Non-GMO Shopping Guide)

4. Shop locally. Most GM food comes from large, industrial farms.

5. Grow your own food. This is really the only way to know what’s in your food and how it was treated. If you think gardening is too hard, try kale. Anyone can grow kale. Just try to grow something, even if it’s out of a pot on the windowsill.

I believe in individual liberty. People have the right to do whatever they want to do and eat whatever they want to eat. But the reason I am so upset about GMOs is because many people have no idea that they are eating them or that they pose a health risk! Monsanto literally sneaks them into our food. Also, small farmers around the world are being taken advantage of by large biotech companies like Monsanto. This is what happens: Monsanto genetically modifies something, let’s say, corn. Since it is now a “creation” of Monsanto, they patent it (claim the rights to; receive the sole right to make, use, and sell it). They sell their seed to farmers, many of whom do not know the dangers of GMOs. Some of Monsanto’s seeds are “terminator” seeds meaning they are only good for ONE use! So the farmer can no longer practice seed saving, and has to purchase their seeds each year from Monsanto. Also (get this!) sometimes the wind will carry pollen from GMO crops into neighboring fields, where it fertilizes the next generation of crops with the modified genes. If you are an organic farmer who doesn’t even believe in using GM seed, and this happens to you, you are subject to lawsuits by Monsanto and other GMO companies that have patented those seeds!

So now organic farmers have to test their own crops for GMOs. Many are finding that despite their best efforts to buffer their crops from cross-contamination, they are finding small amounts of GMOs. As a result, even if something is labeled organic, there is a small chance that it contains GMOs.

Great.

So you see, once GMOs are “released” into nature, there really is no controlling them. Can somebody explain to me how is this is ethical? What if I do not want to take part in the great GMO experiment?

UGH! I am literally boiling over as I am writing this. How can WE allow ONE company to wreak such havoc on people, plants, and environment?

There is a reason why Monsanto is considered to be the most evil company on the planet.

Did you know that Monsanto donated $4 million dollars worth of seeds to Haiti after the 2010 earthquake, but some of the farmers, in protest, burned the seeds?

Also, more recently, Mexican farmers blocked Monsanto’s proposed law to privatize plants and seeds.

These people get it. Probably because they are more connected to their food than we are. They understand the importance of free and open access to plant biodiversity. They understand that one company having so much influence over the world food supply is a bad thing. Countries like these have been raped so long by large multi-national corporations that they know, immediately, when someone is out to screw them. They see poverty, destruction, and corruption on a daily basis. Oh it’s here too. It’s just more subtle. And we are all too concerned with who Snooki is sleeping with on Jersey Shore to notice.

But consider yourself warned. Monsanto is trying to take over and control the food supply. And they are turning our food into toxic, mutant, food-like substances.

Monsanto wants to own plants and animals. They want to patent life.

Do you get it now?

When I go out to eat- which is rare these days- I have made a habit of asking “what do you cook your ___ (fries, fish, chicken, etc.) in? The answer is almost always soy or canola oil. Go ahead, start asking. Also, start reading labels. You will be amazed at how much soy and canola (and corn) you are eating.

This GMO crap is everywhere!

You gotta start making your own food.

Stop eating poison.

People that know me know I am really into healthy, organic food. The reason being is because food is meant to nourish our bodies, not make us sick and lethargic. Not give us stomach problems. Not damage our liver. Not make us infertile.

So opt for real food over GMOs. Real food sustains life.

Tips For Easy Organic Meals

Do you feel like you don’t have the money to eat organic?

Do you feel like you do not have the time to make your own food?

Do you fear that your meal options would be extremely limited if you were to adhere to an organic lifestyle?

 

For today’s post, I will share some tips on making organic eating a little less overwhelming.

First if all, there are things you can do to reduce the cost of organic food. Which I will discuss later in this post.

Other than that, let’s just be honest. Unless you are raising your own cows and chickens, have a fruit and veggie garden, and make everything from scratch, going organic will be more expensive. There are ways to save money, but in general, expect to pay a little bit more.

Having said that, I am convinced going organic is entirely worth it. If you need a little convincing, read this post.

Now, let’s move on.

After you have decided that eating organic is better for you, our animals, and our environment, the main issues with eating healthy food are related to time and variety.

I think people forget that organic doesn’t necessarily mean healthy. It just means no synthetic pesticides, chemicals additives, hormones, or GMOs. Therefore, for just about every food out there… there is an organic version. So truth is, when it comes to eating organic, the sky’s the limit! (But don’t go pigging out on organic cheesecake, or organic fried chicken, or organic hot dogs everyday!!)

There are times, though, when preparing homemade, organic, meals from scratch is just too overwhelming. In reality, making all your meals at home, regardless of whether or not you choose organic ingredients, is time consuming and requires a lot of planning. Therefore, I try to make a grocery list on Friday morning, and go grocery shopping either Friday afternoon, or during the weekend.

Last week, I failed to do either.

So come Monday, I was scratching my head and stressing out trying to come up with something for dinner.

Let me remind you: I try to eat organic at all times. So 97% of restaurants and 99.5% of fast food joints are off limits. The few restaurants we have to choose from in our area are a bit pricey. At the store, organic packaged/prepared foods can be really expensive too (i.e. at certain stores, a jar of organic spaghetti sauce can easily run you 5 bucks). So when I am caught without a plan for dinner, it is a dire circumstance indeed!

I can’t stress this enough: when creating a healthy lifestyle, there is no alternative to doing the hard work. You have to want it. You have to be willing to do the work. Trust me, it gets easier.

But, it’s OK to take a break :)

So here are some tips to get you through when you don’t have the time or energy to cook up an organic, gourmet, meal:

1. When you find organic packaged items on sale, or if you know a particular store has a really good price a certain item, stock up and hide them in your pantry or freezer. Look for things like organic pasta, sauce, soups, granola bars and even frozen selections. You will thankful for your stash the day you come home from an exhausting day at work, would rather use your energy to clean up a messy home, have piles of laundry with your name on it, or a whining kid that needs to eat NOW!

2. Be all about simple! Tuna sandwiches, pasta, macaroni and cheese, eggs and toast, chicken and rice. You can find all of these items organic, with the exception of the tuna. (You can probably find sustainable tuna.) A couple times a week, I make very simple meals.

3. Cheat. I am known for buying a dollar rice noodle bowl at Trader Joe’s and adding my own veggies to it. I am famous for saying (as I am adding fresh broccoli to my bowl), “Look! It’s healthy now!”

It also makes the bowl more filling!

4. Trader Joe’s. If you do not have a Trader Joe’s near you, I am so sorry. If you are looking to move anytime soon, try to be within the vicinity of a Trader Joe’s. Although they are coming under fire for not proving that they do not source GMOs, there are still plenty of items that they carry that are organic… or good enough. I will eat non-organic food if there is no corn, soy, canola, or zucchini in it (these items are almost always genetically modified if they are not organic) and if there are no animal products in it- organic meat and dairy is very important to buy organic. (Click here to find out why). Anyway, Trader Joe’s is the epitome of healthy and affordable. We tend to stock up on our snacks and packaged items at TJ’s.

5. Go raw! Think about it. If you do not have to cook something…. doesn’t that automatically save you time? You do not need to literally “go raw” as in eating everything raw, but it’s good to incorporate raw food into your diet, especially for snacks. It can be as simple as eating an apple or two or day. Munching on carrot sticks. Eating almonds or cashews. Halve an avocado and put a little salt on it. You can make your own trail mix and keep it on hand for a quick snack. Heck, you can just open up the fridge and eat a cucumber. No preparation necessary!

Speaking of raw food, one of my new goals is to eat more salad. We’ve been slipping lately. I just get lazy!  It can take 20 minutes to make a good salad! So once or twice a week I am trying to make a HUGE bowl of salad that will last for a few days. It’s perfect for a snack, or an addition to a meal. It really helps to have it ready in the fridge. You just take some out and eat it! Try it!

Chicken, Rice, and Brocolli

This is my go to meal! So easy! So Healthy!

You need:

6 Organic Chicken Drumsticks (only 3 or 4 dollars at Trader Joe’s or Sprouts!)

Organic White Basmati Rice (make a HUGE pot so you have leftovers)

Organic Broccoli

Lemon, Dry Spices (sea salt, garlic powder, pepper, oregano)

Directions: Preheat oven to 400 degrees. Squeeze lemon all over the chicken legs. Sprinkle spices all over the chicken. Place chicken on the top part of a broiler pan (line the bottom of the pan with foil for easy cleanup!)

Place chicken in oven for 45-50 minutes. Turn the chicken over after about 30 min. Sometimes, I turn the oven on broil for the last few minutes to get the outside nice and crispy.

While chicken is cooking, make some rice. Put 2 cups of rice and 3 cups of water in a pot. Turn the heat on high and bring to a boil. Reduce heat to low. Cover, and let it cook for 15 minutes. Remove from heat, but keep lid on for another 5 minutes or so. When chicken is done, remove from oven and while it is cooling, steam your broccoli.

 

Fried Rice

You need:

Leftover Organic Rice

Chopped Organic Carrots

Frozen Organic Peas

2 Organic Eggs (beaten)

Leftover Organic Chicken, chopped (optional)

Coconut or Olive Oil

Salt, garlic powder, organic soy sauce.

Directions: Cook frozen peas on stove for a few minutes. Heat oil over medium heat in a large pan or a wok. Add carrots and peas. Let it cook for a few minutes. Add eggs and immediately scramble them while they are cooking with a fork. Mix well with veggies. Cook for 2 minutes. Add chicken if you want. Add about 2-3 cups of cooked rice. Cook for a few minutes. Add a little salt, garlic powder, and soy sauce. Mix well!

 

Cheater’s Soup

This “recipe” is for when you are having, “One of those days.”

Directions: Buy a can of organic soup or a rice noodle bowl and add your own fresh veggies to it, such as carrots, broccoli, spinach, or kale. As you heat the soup, the veggies will soften. I like to get a rice noodle bowl, and add broccoli, turmeric, and cayenne pepper. Mmmm! Now it’s healthy!

And finally, here’s a basic salad dressing to go with all the salad you will be eating :)

You need:

1/2 cup high quality organic, cold pressed Olive Oil

1/2 cup organic red wine vinegar

1 clove of garlic, minced or garlic powder to taste

Salt to taste

Pepper to taste

Cumin

Directions: Mix all ingredients together!

Burger Lounge Sells Grass-Fed Burgers!

I just had to do a post on Burger Lounge!!!

…Seeing as how I eat here a couple times a month and can’t stop raving about their food.

The burgers at Burger Lounge are phenomenal!

AND… the beef is grass fed.

Why is that important? Grass-fed beef is healthier, tastier, and more environmentally responsible. Most cows are fed grains- especially corn. However, grass is the natural diet of cattle, not grain! Cows raised on grass are healthier because it’s their natural food. In fact, conventional (factory farmed) cows have to be given antibiotics because fattening up cows with grain increases milk output, but it also increases physiological stress in the cow, leading to a higher incidence of mastitis and other infections. Also, grains are hard for cows to digest. In a nutshell, grain makes cows sick. Eating the meat or drinking the milk of sick animals will probably make you sick too.

When animals are raised in harmony with nature, the effects are profound and far reaching. By rotating the animals through various pastures through the seasons, native biodiversity is preserved, soil fertility is enhanced, and we avoid the dirty, unhealthy conditions of feedlots.

Here’s something else to think about: large areas of land that used to be dedicated to growing crops to feed people, are now dedicated to growing grains… to feed our factory farmed animals.

Many wounds have been inflicted upon us and our environment by industrial agriculture.

So I am all about supporting restaurants that use healthy ingredients produced in a sustainable environment.

Grass-fed beef patty, organic bun, organic cheese, organic veggies, and yes… organic ketchup. All I can say is WOW.

There are a bunch of Burger Lounges in the San Diego area, and there are a couple in the LA area. If you do not live near a Burger Lounge… I am so sorry. But a google search will show you if you have any organic burger joints in your area. Or organic anything in your area for that matter. I am blessed to live in Cali, which is sort of like the mecca of the natural/organic/local food lifestyle.
